Sagaretxe is a “Basque” bar, restaurant and cider house serving a chef’s selection of “pintxos” that fly nonstop out of the kitchen. Basque-made cider has more acidity and bitterness than sweetness, allowing it to be enjoyed with the variety of pintxos. There’s even an art to opening and serving the cider… Alex, the owner, says the secret is the right angle of the glass letting the gas evaporate, which ensures that it doesn’t end up bitter.
